Emilie Glad Bak

Emilie Glad Bak is an Engineer and Scientist specializing in microbiome research with over 10 years of experience in the field. In her latest role as Health Science & Technology Lead at Novonesis Human Health Biosolutions, she led research in protective and immune health, focusing on postbiotics, enzymes, HMOs, and proteins to develop innovative solutions in the microbiome space.
Emilie holds a PhD in Health Sciences from the NNF Center for Basic Metabolic Research at Copenhagen Univeristy, where her research delved into human gut microbiomes and viromes. She has authored 11 high impact scientific publications and 2 book chapters, significantly advancing our understanding of the microbiome's impact on health.
With extensive experience in pharma and biotech, Emilie has a proven track record in translating complex microbiome science into actionable strategies that address key health challenges. As a speaker at international conferences and in the upcoming webinar on "Foundations of the Gut: How Your Microbiome Influences You," she will share her insights on the microbiome’s role in shaping human health. Her passion for innovation and deep expertise make her a leading voice in this field.

Adam Baker

Adam Baker is Director of Science, Future Labs at Novonesis. It’s here that Adam leads the Future Lab incubator, which uses molecular and data science, AI approaches, and leverages microbiome science and bioinformatic capabilities, to give a window into how probiotics can play and integral role in the future of sustainable health and wellness and be connected to the digitalized consumer lifestyle.
Future labs focuses on the key role of bacteria throughout life and how these bacteria play key roles in our health. In particular the gastro intestinal environment, and clinical understanding of the interactions between the bacteria and the host microbiome at a molecular and clinically functional level.
Prior to working at Novonesis (legacy Chr. Hansen), Adam Baker worked as VP of Diagnostic Product Develop at Exiqon A/S in Denmark for 5 years, and as Head of New Technologies at deCODE Genetics in Iceland. In both of these roles, Adam’s focus was on the development of new insights and therapeutics to support the clinical treatment of complex diseases.

Rebecca Replogle

Rebecca Replogle holds a doctorate in molecular and biochemical nutrition from Purdue University where she researched vitamin D and calcium metabolism. For nearly 10 years, Rebecca has led nutrition science research to substantiate functional claims and advance health-focused innovation in the food & beverage industry. In particular, she has cultivated expertise in the gut microbiome, functional ingredients, and research translation. In her current role as Nutrition Science Lead in Novozymes’ Customer Co-Creation Center, Rebecca brings her experience with vitamins, minerals, and biotic ingredients together to help customers create new and exciting food & beverage innovation.

Nathalia Edwards

Nathalia Edwards is a food scientist and winemaker who has worked with fermented beverages for +10 years. Her focus has always been on using microbes and fermentation to create the best possible beverage, including (but not limited to), ensuring bio-protection and reduction of SO2 in wine and developing great tasting non-alcoholic beverages such as beer and fermented teas. Nathalia started her career in applied science and now works as business developer in the Novonesis Functional Food and Beverage team. It is here that Nathalia is spreading knowledge and knowhow about the gut health space in the food and beverage industry, and investigating how probiotics can be part of building a strong and healthy gut microbiome.
