Tamar Banner

Tamar Banner is a veteran of the craft beer industry, having begun her professional brewing career in the U.S. in 2001. Over her 24 years in brewing, she has gained experience across various roles, including brewhouse, cellar, packaging, quality control, and management. She is currently the Brewmaster at To Øl Brewery in Svinninge, Denmark, where she oversees brewing, packaging, quality, and recipe development.

Before joining To Øl, she worked at Harpoon Brewery in both Boston and Vermont, New Belgium Brewery in Fort Collins, Colorado, and BrewDog Brewery in Canal Winchester, Ohio. As a Certified Cicerone, she is passionate about beer and food pairings, and she regularly speaks at beer dinners, festivals, and events.

Tamar holds a bachelor’s degree from Yale University and a master’s degree in Brewing and Distilling Science from Heriot-Watt University. She has served on the boards of two chapters of the Master Brewers Association of the Americas and is an active member of the Danish Brewmasters Association. In her spare time, she enjoys experimenting with other forms of fermentation and makes her own cheeses at home.

Jon Seltin

Jon Seltin is the Head Brewer at Brick Lane Brewing Co., one of Australia’s largest independent breweries. Brick Lane produces 200khl of beer, cider, RTD beverages, non-alcoholic beer, and other beverages. Jon oversees supply operations, including brewing, liquid processing, packaging, supply planning and logistics, quality, maintenance and engineering, as well as providing technical leadership.

As a contract producer, Brick Lane operates with a high level of complexity, managing over 95 active brands and nearly twice as many individual SKUs. The brewery works with around 35 unique wort streams and 4 primary (up to 8 total) yeast strains. To manage this complexity, Brick Lane adopted FLY technology to streamline lab propagations and enable quicker responses to planning changes.

Outside of Brick Lane, Jon is an active international beer judge and serves on the industry advisory board for the Australian International Beer Awards. He also chairs BIRA, an interlaboratory proficiency scheme for small breweries in Australia, which he helped establish in 2018.

Anders Nielsen

Anders Nielsen is a Senior Application Scientist at Novonesis – Brewing, where for the past 3½ years, he has been deeply involved in the processes and production of the SmartBev™ FLY yeast format, as well as providing technical support and leading the implementation of a new state-of-the-art pilot plant for culture production.

Anders holds an MSc in Biotechnology Engineering and a Diploma as a Master Brewer from SSB. His previous experience includes 3½ years as a brewery process engineer at Alectia/Niras and 4½ years as Brewhouse Manager at Faxe Brewery – Royal Unibrew.

Outside of his work at Novonesis, Anders serves on the board of the Danish Brewers Guild and is a member of the committee for the bi-annual Nordic Technical Meeting.

Anne Louise Friis Andersen

Anne Louise Friis Andersen is a seasoned Business Development Manager with a passion for revolutionizing the world of Food and Beverages with innovative biosolutions. With a remarkable 7-year journey in the industry, Anne has become a driving force in expanding the Beverage space with innovative culture solutions.

Anne holds an MSc in Human Nutrition from the University of Copenhagen. Early in her career, she was involved in product development before transitioning to a Business Development Manager role in the protein ingredients space.

In 2021, Anne embarked on a new chapter by joining Novozymes – now Novonesis – where she has taken on various commercial roles within the Food and Beverage division. Her passion? The thrilling realm of no-low alcohol beer.
